Pani Puri


 The only food that can make you experience every emotion in one bite #EmotionalEating!


INGREDIENTS:
 
Puri:
  • Semolina/Suji- 1 cup
  • Maida/plain flour- 2 tbsp
  • Oil- 3 tbsp
  • Hot water- 1/4 cup
  • Oil- [for frying]
Teekha Pani:

  • Mint- 1/2 cup
  • Ginger- 1 inch
  • Green chilli- 4 [as per taste]
  • Chaat masala- 1tsp
  • Asafoetida- [a pinch]
  • Salt black- 3/4 tsp [as per taste]
  • Cumin powder- 1/4 tsp
  • Water- 4 cup
Stuffing:
  • White peas- 1 cup [soaked overnight and boiled]
  • Onion- 1/2 [small chopped finely]
  • Coriander- 2 tbsp [finely chopped]
  • Cumin powder- 1/2 tsp
  • Salt- 1/2 tsp [as per taste]
  • Chaat masala- 1/2 tsp
For serving:
  • Boondi- 2tbsp
PROCESS:
  1. In a large bowl, take suji/semolina and maida.
  2. Add 3 tbsp oil, crumble and mix well.
  3. Now add 1/2 cup hot water and start to knead.
  4. Knead for 5-8 mins or till the dough is formed.
  5. Sprinkle water as required and make a smooth dough.
  6. Cover this dough and let it rest for 20 mins.
  7. Now pinch a small ball sized dough. Roll and flatten into small disc. Make it thin.
  8. Deep fry these thin discs. Fry on medium flame and make it golden brown from both the sides.
  9. Puri is now ready once it is cooled completely.
Teekha Pani preparation:
  1. In a blender, take mint leaves, ginger, green chillies and blend to a smooth paste, adding water as required.
  2. Transfer this paste into a large bowl.
  3. Add chaat masala, cumin powder, hing, black salt and 4 cups of water.
  4. Mix well and teekha pani is ready to enjoy with golgappa/puri.
Stuffing preparation:
In a bowl, mix together the boiled white peas, salt, chopped onion, coriander, cumin powder and chaat masala. Mix well.

Assembling pani puri for serving:
  1. Just before serving, make a small hole in center of puri.
  2. Stuff a tsp of prepared stuffing into puri.
  3. Dip into teekha pani and enjoy.
NOTE:
  • In place of white peas, aloo stuffing can also be used.
  • Also some people like khatta meetha pani for filling the puri. 
Khatta meetha pani preparation:
  • In a large bowl take 1 cup tamarind extract and 3 tbsp jaggery.
  • Add 1tsp chaat masala, 1 tsp cumin powder, 1/2 tsp pepper powder, 1/2 tsp chilli powder, pinch hing, 3/4 tsp salt, 3 cup water.
  • Mix well and khatta meetha pani is ready to be enjoyed.
