Litti Chokha....A rustic melody of taste and tradition.


Litti is a whole wheat flour dough ball, stuffed with spiced mixture of roasted black chickpea flour. While chokha is a very basic mashed relish made of vegetables like brinjal.


INGREDIENTS:

For Litti Dough:
  •     Whole wheat flour-2cups
  •     Salt-1/4tsp
  •     Ghee-1tbsp
  •     Water-1cup or as required
For Stuffing:
  •     Roasted chickpea flour-1cup
  •     Cumin seeds-1/2 tsp
  •     Green Chilli chopped-1 to 2 tsp
  •     Ginger finely chopped-1tsp
  •     Coriander leaves-2 tbsp chopped
  •     Salt as per taste
  •     Amchur/Lemon juice as per taste
  •     Mustard oil-2tsp
  •     Water-1 to 2 tbsp
For Baigan Chokha:
  •     Eggplant-1large or 400gm
  •     Onion-1/3 cup finely chopped
  •     Green Chilies- 1/2 tsp chopped
  •     Garlic-1/2 tsp chopped
  •     Coriander leaves-1 to 2 tbsp chopped
  •     Mustard oil-1tsp
  •     Tomato -2 medium
  •     Salt as per taste
  •     Ginger- 1/2 tsp chopped
PROCESS:

Litti Dough
  1. In a mixing bowl, take whole wheat flour & salt. Add ghee.
  2. Add water in parts and knead to smooth & soft dough.
  3. cover & keep aside the dough to rest for about 15min.
Stuffing
  1. Slightly crush the cumin seeds.
  2. Take chickpea flour in a bowl. Add to it cumin seeds.
  3. Add chilies, ginger, coriander leaves, amchur, mustard oil & salt. Mix it well.
  4. Sprinkle water into it. Mixture should not be too dry or too wet.
Stuffing Litti
  1. Make small sized balls from the dough and roll them to about 5-6 inches.
  2. Place some stuffing in the center.
  3. Pleat and join the edges. Press the dough balls in your palms, so as to get a round shape.
  4. Prepare all, stuffed littis this way and place them on a baking tray.
  5. Do grease the baking tray well before placing the littis.
  6. Place the littis in a preheated oven at 200 degree centigrade.
  7. After 10-12 minutes, remove the tray and flip each litti. keep the tray back in oven and bake again for 10min.
  8. Bake till the crust looks done with some light brown spots on them.
  9. Brush the littis with some melted ghee all over.
Baigan Chokha
  1. Rinse baigan/eggplant properly in water. Place it on a wired rack on a gas stove.
  2. Keep turning the eggplant after 2-3 minutes, so that it is evenly cooked.
  3. Roast till it is completely cooked & tender.
  4. Similarly roast the tomatoes on gas stove.
  5. Then peel & chop both tomatoes & eggplant.
  6. Add the mashed baigan & tomato in a bowl.
  7. Add to it finely chopped onions, chopped green chilies, chopped garlic & coriander leaves.
  8. Add mustard oil & salt.
  9. Mix everything well.
Serve litti (dipped in ghee) with chokha. Enjoy when hot.
