Bhuna Gosht
One of the most popular Indian mutton dishes.
A delicious mutton curry recipe. One of the most popular Indian mutton dishes. A bit time consuming but worth it.
INGREDIENTS:
- Mutton- 750gm [cut into medium pieces]
- Onion- 6 [sliced]
- Garlic cloves- 4 whole peeled
- Ginger- 4 inch [grated]
- Yoghurt- 3/4 cup
- Coriander powder- 2 tsp
- Red chilli powder- 2tsp
- Salt- as per your taste
- Mustard Oil- 1/2 cup
- Ghee- 4tbsp
- Coriander leaves- 4 tbsp [chopped]
Whole Spices:
- Dry red chillies- 6
- Bay leaves- 2
- Cinnamon stick- 1 1/2 inch
- Mace- 1tsp
- Cloves- 5
- Whole black pepper corns- 5
- Black cardamom- 2
- Nutmeg- 1/2 tsp [crushed]
NOTE- Dry roast the above mentioned spices, ground them to make a coarse powder.
PROCESS:
- Wash the mutton pieces and keep them aside.
- Take a heavy bottomed pan and heat oil in it. Add whole spices powder to it. Once they get aromatic, add garlic cloves and ginger. Saute them until they turn golden. Then add the onions and fry them till are soft.
- Add the washed mutton to the pan and saute it. Add yoghurt and salt to it. Give it a mix. On high heat, cook mutton until water starts separating from curd. then close the lid of the pan, lower the flame and wok the mutton until it is soft and juicy.
- Once the mutton is cooked, add red chilli powder and coriander powder. Increase the heat and saute the mutton. Add ghee to it and keep roasting for a few more minutes.
- Once the curry is brown in colour, switch off the flame and garnish with coriander leaves.
NOTE- Recommended to cook on slow mode and not use a pressure cooker.
