Gatte
A tasty dish from Rajasthani cuisine. Prepared with gram flour as base ingredient.
INGREDIENTS FOR MAKING GATTE:
- Gram flour- 1 cup
- Red chilli powder- 1/2 tsp
- Coriander powder- 1 tsp
- Turmeric- 1/4 tsp
- Salt- to taste
- Oil- 1 tsp (to grease hands)
- Oil- 1tbsp (to cook)
- Water- (for boiling)
- Hing- a pinch
- Carom seeds- 1/4 tsp
INGREDIENTS FOR MAKING MASALA/GRAVY:
- Ginger paste- 1tsp
- Onion- 1 big (chopped)
- Fenugreek leaves (dried)/ kasoori methi- 2 tsp
- Garam masala powder- 1-2 tsp
- Coriander powder- 1tsp
- Red chilli powder- 1/4 tsp
- Haldi- 1/4 tsp
- Salt- to taste
- Oil- 1-2 tbsp
- Cumin seeds- 1/4 tsp
PROCESS:
- In a bowl, combine besan and all the spices and add salt. Mix well and knead it and form a dough with the help of little water.
- Grease your hands, take a small portion of dough and roll it in between your bands and give them a cylindrical shape. Similarly make cylindrical shape to rest of the dough.
- Boil water in a pan and add gatte to it.
- Boil for 6-7 minutes and they will float right up.
- Now remove these from boiling water and keep them aside to cool.
- When gatte has cooled down, cut them into 1/4- 1/2 pieces.
- In a kadhai, add oil and heat. Add cumin seeds. When they start to sputter, add chopped onion and ginger paste. Add rest of the spices and roast.
- Once oil starts to separate, add little amount of water to make the masala little loose. Add kasoori methi and cook for 2 minutes.
- Adjust the seasoning and drop in the cooked gatte. Simmer cook for 2-3 mintue.
- Cover and let gatte soak in the flavor.
[NOTE- Don't overcook the gatte while boiling. Once they float to the surface, they're done.]
